
【中文摘要】 冰溫技術(shù)是一種新型食品貯藏保鮮技術(shù)。本文介紹了冰溫技術(shù)的原理及其在食品貯藏中的研究進(jìn)展,并指出作為冰溫技術(shù)延伸的超冰溫技術(shù)和冰膜貯藏技術(shù)未來(lái)會(huì)有廣闊的發(fā)展空間。
【英文摘要】 The ice-temperature technique is a new technology for food storage and preservation. In this paper, the principles and advances of ice-temperature technique of food storage are summarized. There could be much room for development of super-ice-temperature and ice-membrane techniques in the future.
